Ingredients
2 tsp. olive oil
1 onion, chopped
1 red pepper, finely chopped
2 cloves garlic, minced
1/4 tsp. each salt and pepper
1 (12 oz.) can Roast Beef in Beef Broth, drained
2 tbsp. prepared Italian dressing
1/3 cup herbed cream cheese
1 1/2 cups arugula
18 whole wheat mini pitas
Instructions
In large skillet, heat olive oil over medium-high heat; sauté onion, red pepper, garlic, salt and pepper for 3 to 5 minutes or until soft and tender. Stir in beef and Italian dressing; cook until beef is heated through. Spread about 1 tsp herbed cream cheese inside each pita; tuck in some arugula and top with the beef mixture.
Tip: Substitute light herbed cream cheese for the regular cream cheese or even another flavor of cream cheese if desired.
