Ingredients

  • 6 slices white sandwich bread

  • 1 (10 oz.) can Shredded White Chicken in Curry Sauce

  • 1/4 cup mayonnaise

  • 1/4 cup prepared mango chutney

  • 1/4 cup currants

  • 3 tbsp. finely chopped fresh chives, divided

  • 1/4 tsp. curry paste

  • 1/4 tsp. each salt and freshly ground pepper

  • 1 cup shredded aged Cheddar cheese

Instructions

Preheat broiler. Line baking sheet with foil. Cut off crusts from bread; cut each slice diagonally into 4 triangles. Place on prepared pan; broil for 30 to 60 seconds on each side or until lightly golden. Cool completely. Mix together chicken, mayonnaise, chutney, currants, 2 tbsp (30 mL) of the chives, curry paste, salt and pepper. Spread evenly on each toast point, spreading to edges. Sprinkle evenly with cheese. Broil for 1 to 2 minutes or until cheese is melted and filling is warm. Garnish with remaining chives
