Ingredients
4 oz. cream cheese, at room temperature
2 tbsp. 2% plain Greek yogurt
1 tbsp. finely chopped fresh dill
1 tbsp. lemon juice
1 tsp. finely grated lemon zest
1 tsp. Dijon mustard
1/2 tsp. salt
1/4 tsp. freshly ground pepper
1 (5 oz.) can Chunks of Ham, drained and flaked
1/4 cup finely chopped red onion
1 1/2 English cucumbers
Small dill sprigs, for garnish
Instructions
Mix together cream cheese, yogurt, dill, lemon juice, lemon zest, mustard, salt and pepper until blended. Stir in ham and red onion; refrigerate. Trim ends of cucumbers. Cut each cucumber into 1-inch thick slices. To make cups: Scoop out center of each slice, making sure to leave base intact. Just before serving, spoon 1 tbsp. ham and cream cheese mixture into each cup. Garnish with dill.
