Ingredients
1/4 cup plum, apricot or peach preserve
3 tbsp. rice wine vinegar
3 tbsp. soy sauce
1 tbsp. corn starch
3 tsp. oil
1 small red onion, thinly sliced
8 oz. Fresh snow peas
2 (10 or 12.5 oz)cans Chunk Chicken in Water, drained
4 medium plums, apricots or pealed peaches, sliced
Cooked rice or chinese noodles
Instructions
Cook rice or noodles. Drain and keep warm. Combine and stir preserve, vinegar, soy sauce and corn starch. Heat oil and add onions. Cook for 2 minutes. Add snow pears and cook 3 minutes. Add chicken, sauce and fruit and gently blend. Once thick and bubbly; serve over noodles or rice.
