Ingredients
2 tbsp. olive oil
1 small onion, sliced
1/2 red pepper, sliced
1/2 green pepper, sliced
2 cloves garlic, minced Pinch each salt and pepper
1 (10 oz.) can Chicken in Chipotle Sauce
4 small submarine buns
8 slices bacon, cooked
4 slices mozzarella cheese
4 slices Cheddar cheese
Lime Sour Cream: 1/3 cup sour cream
1/2 tsp. lime zest
1 tbsp. lime juice
1/4 tsp. salt
Instructions
Lime Sour Cream: Stir together sour cream, lime zest, lime juice and salt. In large skillet, heat oil over medium-high heat; sauté onion, red and green peppers, garlic, salt and pepper for 3 to 5 minutes or until vegetables start to soften. Stir in chicken; cook for 3 to 4 minutes or until heated through. Spoon chicken mixture into buns along with bacon, mozzarella and Cheddar cheese. Serve with Lime Sour Cream. Tip: Stir some chopped fresh cilantro into the sour cream if desired.
